CRUST:

1 1/2 cups crushed graham crackers
1/4 cup sugar
1/3 cup Kelapo Coconut Oil, melted
Combine the crumbs and sugar in a small bowl. Add coconut oil and blend well.

Press onto the bottom and up the sides of an ungreased 9-inch pie plate. Refrigerate for 30 minutes before filling, or bake at 375 degrees F for 8–10 minutes or until crust is lightly browned. Cool on a wire rack before filling.

FILLING:

2 (8 ounce) packages cream cheese, softened
2/3 cups sugar
3 large eggs
1/2 teaspoon vanilla
1 teaspoon vanilla
Beat cream cheese, sugar, eggs, and vanilla with mixer until smooth. Pour filling into crust. Bake for 22 to 25 minutes at 350 degrees Fahrenheit. Turn oven off. Cool for 5 minutes.

TOPPING:

3 tablespoons sugar
8 ounces sour cream
1 teaspoon vanilla
Combine all ingredients and mix till smooth. Spread over warm cheesecake and return to warm oven for 5 minutes. Let cool to room temperature, then refrigerate.
